


Yellow Squash and Feta Grilled Toast
Heinen’s cream cheese is used as the base of a creamy spread on grilled sourdough bread and then topped with grilled squash, onion, crumbled feta and fresh basil or parsley. You can also use any fresh herbs you may have on hand—rosemary or thyme would also be delicious!

Yellow Squash and Feta Grilled Toast

Ingredients
2 Tbsp. Heinen's extra virgin olive oil, plus more for serving
2 Yellow squash, halved lengthwise
1 Yellow onion, halved
4 oz. Heinen's plain cream cheese
1 tsp. Heinen's garlic powder
2 Tbsp. chopped fresh basil, plus more for serving
4 slices Heinen's sourdough loaf
2 oz. Heinen's feta cheese
Fresh basil or parsley, for serving
Pinch of salt and pepper
Directions
- Brush 2 Tbsp. olive oil on the yellow squash, onion and 4 slices of sourdough.
- Heat a grill to medium heat. Grill vegetables for 10-12 minutes, turning frequently until grill marks are golden-brown. Let cool. Grill bread for 2-3 minutes, until golden brown.
- Combine 4 oz. cream cheese, garlic powder, salt, pepper and chopped fresh basil in a small bowl.
- Spread cream cheese mixture over grilled bread. Slice squash and onion and top the bread with the grilled vegetables.
- Garnish with 2 oz. feta crumbles, fresh basil and an extra drizzle of olive oil.
